So as you can tell i was a little blue today, so i decided to go to the gym and cooked some kebabs for dinner.
You'll need:
500g of pork
500g of beef (this is what i've used but use any type of meat you like!)
1 chopped onion
2-3 tablespoon minced garlic ( i was lazy so this came out of a jar)
4 tablesppon of Harissa paste ( this is like a middle eastern blend of lemon, garlic and chilli)
a handful of freshly chopped mint
3 chopped chillies
lemon zest, chopped finely
tandoori spices
1.The steps are easy, chop everything that needs to be chopped, put in the spices and stir like crazy! The tricky thing about seasoning meat is that you can't tell when it is properly seasoned, so for me, i put as much spices until the meat mixture looks devil red and flecked with chilli bits. Then i know it is ready for the oven!
2. Roll meat into cigar shapes and pinch the edges so that they will be nice and crisp, dust with more season and grill/baked on a tray coated with olive oil.
3.When the oven/grill smells lovely, you know its done.
4.Serve with salad, tzatziki (just mix greek yogurt with cucumber bits, mint and season with salt and pepper ), quartered tomato. I ran out of yoghurt so i used BBQ sauce.
5.If you have extra ingredients like ground cumin and are extra hardworking, lightly roast them on a pan before mixing it all together, add bits of chopped nuts for extra texture.
Pity I don't have a camera with me, so that i can post the picture!
But the result is a explosion of flavours and texture from your first bite, and you can help but want more :) And this is really good and healthy for your body too!
And as you know, breakfast options for me are quite limited, cereal, oats (yuck), and my favourite is the egg omelette cause you just have limitless options, and if you are always cooking for yourself (like me) you can just change it up to whatever suites your preferences/left in the fridge.
I'd like to name my omelette the Olympian just because it is so filling and keeps you going, too lazy to type the details but this is fool proof, add chestnut mushroom, chopped chorizo sausage and leave to sauté on a pan with olive oil. Once the chorizo has become nice and crisp and flavoured the mushroom, mix together with the egg mixture, add mozzarella cheese and cook! I have yet to master the skill of making a perfect omelette as it always ends up looking like char queh, but it still tastes like a winner!
Next up im going to try what xx always raved about which is the parma ham with melon, and served in resturants it may cost a bomb, but I manage to buy the ingredients under 5 pounds( which is basically ham + melon), but im looking forward to try it!
